- 2 Ripe bananas Mashed (about 1 cup)
- 1¾ cups All-purpose flour an use whole wheat for variation
- ⅓ cup Melted butter Substitute with oil or Greek yogurt
- ½ cup Brown sugar Packed
- 2 Large eggs
- 1 tsp Baking soda
- ¼ tsp Salt
- 1 tsp Vanilla extract Optional
Preheat oven to 350°F (175°C).Grease a 9x5-inch loaf pan or line it with parchment paper. Mash 2 ripe bananas in a bowl until smooth. In a large bowl, whisk melted butter and sugar until well combined. Add eggs and vanilla extract, mixing thoroughly. Fold in mashed bananas. In a medium bowl, whisk together flour, baking soda, and salt. Gradually add dry mixture to wet ingredients. Stir until just combined (avoid overmixing). Pour batter into prepared loaf pan. Bake for 50-55 minutes or until a toothpick inserted into the center comes out clean. Cool in pan for 10 minutes, then transfer to a cooling rack to cool completely.
